Did you know that the piña colada is the official drink of Puerto Rico? This popular co*cktail originated there. Unlike the original, the recipe I am sharing with you today doesn’t contain any alcohol, so the whole family can enjoy it. If you want a more grown up version, just add in your favorite rum.

Pina Colada Mocktail:

Ingredients:

  • 2 cups of pineapple juice
  • 1 cup of coconut cream
  • 2 cups of ice cubes
  • Fresh pineapple wedges and maraschino cherries for garnish

Directions:

  1. In a high speed blender, add the pineapple juice, coconut cream, and ice cubes. Blend the ingredients until they are smooth and well combined.

2. Taste the mixture and adjust the sweetness by adding more pineapple juice or coconut cream as needed.

3. Pour the mixture into glasses and garnish with a pineapple wedge and maraschino cherry.

Note: You can also make this recipe ahead of time and store it in the fridge until you’re ready to serve. Simply give it a quick stir before pouring it into glasses.

This classic co*cktail is delicious as directed but it’s always fun to shake up a few of the ingredients!

Ingredient suggestions:

  • A classic piña colada is made with white rum or gold rum, but dark rum or even a spiced rum can also be used. Each type of rum will provide its own unique flavor to your drink.
  • Up the intensity of the pineapple flavor by replacing some of the ice cubes with frozen cubes of pineapple juice. Just freeze the juice in an ice cube tray beforehand and it will be ready when you are.
  • Try making this with your favorite fresh fruit like mangos or strawberries instead of pineapple.
  • Make an adult version by adding 1 oz coconut rum or light rum of choice. Malibu rum mixed with pineapple juice over a cup of ice has always been a favorite of mine.
